Description
The Christmas Lima bean is a large bean with batik-like strike markings of burgandy and white that retains its color when cooked. It is also known as a chestnut lime and its substitute is a lima. They have a nutty flavor and are great in casseroles and salads.

Suggested Use: Mix Christmas Lima beans with sweet corn to make traditional succotash. They are a hearty addition to soups, stews and casseroles, or toss precooked beans in cold vegetable and pasta salads.
Basic Preparations: Rinse and pick over beans. Place in a large pot and cover with fresh water. Bring to a boil, reduce heat and simmer, covered, for 60 minutes until tender. One cup dry yields 2-1/4 cups cooked.
