The dry holiday bean soup mix is our best-selling beans in a medley. Makes a very colorful gift when packed in a jar with calico over the top. Most importantly, it is great when cooked with a ham hock or with your favorite bean soup spices.
DIRECTIONS: WASH 1 LB. BEANS, PLACE IN LG KETTLE COVER W/ WATER 2″ ABOVE BEAN LINE. ADD 2 TBSP. SALT, SOAK OVERNIGHT. DRAIN IN THE MORNING. ADD 2 QTS. WATER, 2 HAM HOCKS OR PIECE OF HAM. BRING TO A BOIL, ADD 1 LG ONION, 1-16 OZ CAN TOMATOES, 1 TSP. CHILI POWDER, JUICE OF A LEMON & PEPPER TO TASTE. SIMMER 3 HR OR IN CROCK POT: 3 HR-HIGH OR 5 HR-LOW. REMOVE HAM FROM HOCK BEFORE SERVING. MAKES 4 QUARTS.
