Description
Small Red Beans (Phaseolus vulgaris) are a plump, round bean with a deep brick red color. this bean is about 1/2 long with a mild flavor and firm texture and holds its shape well. Small Red Beans are also know as Habichuelas and Habas Pequenos Colorados. This is a bush bean rather than a vine bean. This is the bean which is famous in the Southern dish Red Beans and Rice.

Suggested Use: This bean can be used in the famous bean dishes, Red Beans and Rice and Chile Con Carne. It is a good substitute for any recipe calling for Kidney Beans. Small reds are also wonderful tossed with fresh basil and tarragon.
Basic Preparations: Soak overnight before cooking. This bean has a fragile skin which will break open if the bean is boiled too hard, so simmer gently. Small red beans will cook in about 45 minutes. One cup dry yields 2-2/3 cups cooked.
